YUM! Try This Cinnamon Donut Muffin Recipe!

WHOA…These cinnamon donut muffins might just change your life!

All right, so a cinnamon donut muffin might not rescue you from a mountain top or perform precision brain surgery on you but, don’t under estimate it’s ability to rock your world. Sure you might have to put your stretchy pants on after popping the first dozen or so in your mouth but, is that really such a high price to pay for life altering joy? Heck, you will just be more comfy in those stretch pants anyway.

CINNAMON DONUT MUFFIN RECIPE

(recipe yields 24 mini donut muffins)

Ingredients for the Batter:

  • 1/3 Cup of Soft Butter

  • 1/2 Cup Granulated Sugar

  • 1 Large Egg

  • 1/2 cup of milk

  • 1 1/2 cup All-Purpose Flour

  • 1/4 teaspoon Ground Nutmeg

  • 1/8 teaspoon Salt

  • 1/2 teaspoon Vanilla Extract

  • 1 1/2 teaspoons Baking Powder

Directions:

  1. Preheat the oven to 375 Fahrenheit (using a conventional oven.)

  2. Using an electric mixer, combine the butter and the sugar and mix until combined. No need to”fluff” the butter.

  3. Add the egg, mix and scrape down the sides of the mixing bowl.

  4. Add the milk and mix until combined. The milk will incorporate best if it is close to room temperature. Cold milk may create small butter chips in the mixture. If this happens, I give you permission to ignore it and keep on going! I won’t tell anyone.

  5. Add the remaining ingredients and mix until combined. Don’t forget to scrape down the sides 1 last time!

  6. Generously spray a mini muffin pan with pan spray. Do not use muffin liners.

  7. Scoop the batter 1/2 full. The mix will make 24 mini donut muffins.

  8. Bake at 375 for approximately 14-15 minutes. Muffins will be lightly golden in color and spring back when lightly touched.

  9. Allow muffins to completely cool prior to the next step. If you try to toss the muffins while they are still warm, they may break apart.

WARNING: Finished donuts are highly addictive. Guard your share from others. Consider yourself warned.

FOR TOSSING:

Ingredients:

  • 3/4 cup melted but slightly cooled butter (don’t faint at the amount of butter)

  • 1 cup Granulated Sugar

  • 1 Tablespoon Ground Cinnamon

  • 1/8 teaspoon of Salt (a pinch is fine but absolutely necessary!)

Directions:

  1. In a medium size bowl, mix together the sugar, cinnamon and salt. Set aside.

  2. Place the cooled mini muffins in a large mixing bowl.

  3. Poor the butter all over the muffins and gently toss with your hands.

  4. One by one, remove the buttered mini muffins and roll them around in the bowl with the cinnamon, sugar and salt mixture.

  5. Important! Pop one in your mouth when no one is looking. This serves as an important quality assurance check. Yum!

  6. Serve and Enjoy!

These donuts are best served the day that you make them but, (I speak from first-hand knowledge) they are still tasty a day later!
